Chicken Parmesan

 
This chicken Parmesan started off as something I was going to make from scratch. When stopping by my mom's house to say hi, she offered already prepped Panko crusted chicken breast tenders. Um Yes please :) This dinner was a little over a half an hour start to finish. And it was gooOOD. I served it with spaghetti and Caesar salad but you could also serve it with mashed potatoes or by itself just with salad.


I started by taking a broiling rack turned upside down, I wrapped the bottom of it with foil, so any fat or grease that cooked off the chicken went down through the grates onto the foil. I didn't actually get much onto it. That is a good thing.


 I sprayed it lightly with Pam olive oil cooking spray just so it wouldn't stick to the grates.
 
 Here are the chicken breast tenderloins I used. 
 Bake the chicken per package instructions. While your chicken is baking get your water boiling for spaghetti
 When it is done take your sauce and put a thin layer of it on the bottom of a 13x9 baking dish
 Place the cooked chicken on top of it.
 Top with more sauce and mozzarella and Parmesan cheese
 I also chopped up some fresh basil and threw that on top.
 Bake at 350 degrees until the cheese it melted and bubbly. While it bakes throw your spaghetti noodles into the pot to boil.
 This dinner was easy yummy and a hit!

Ashley, this is your uncle Larry. Do you use just a regular tomato/basil sauce? Looks great!! I want to try making this.

Hi Uncle Larry!!! Yes I use a jarred tomato sauce. I had a garlic basil one on hand but you could use ANY sauce you like :) I love you and am counting the days to New Years!

Oh boy this looks really good. I have never thought of turning my broiling pan upside down and covering with foil that sure makes for easier clean up. Very smart. Thanks for a great looking dinner idea.
