Pesto Salmon Salad

CRAZY WONDERFUL RECIPE NOTE: I have said it before but I mean it when I say my recipes are guidelines. When I see a recipe or even a meal at a restaurant I instantly try to figure out how to make it work for us. If you don't like fish, try chicken, if you don't like blueberries try cranberries or even strawberries. You know your palatte, make it work for you! Don't throw away a recipe just because on paper it doesn't seem like your kind of thing. The minute I figured that out, is the minute I learned to love cooking! I have always loved FOOD, now I love creating, reinventing and tasting all the things I love! 

-PESTO SALMON SALAD-
I just throw these ingredients together. 

  • Lettuce - Really any kind ie: Artisan blend or romaine or even spinach NOT iceberg though
  • Salmon (baked with pesto butter) at room temp or even chilled- however you like it.
  • Fresh Blueberries
  • Sahale glazed almonds (with cranberries, honey and sea salt)
  • LITEHOUSE Toasted Sesame Ginger Dressing

I used to wait until I went to Costco and got their Pesto Salmon for dinner, then I'd make this the next day for lunch. But now I make the salmon just so I can have this salad for dinner. Tonight I just bought Wild Sockeye at the market, I pulled out any bones I saw and patted it dry. This piece had skin on it. It doesn't matter either way though. I cut it in 2 pieces so it would fit in a 13 x 9 Pyrex.

 

Made my own pesto butter by mixing softened butter with already made Pesto to taste. If you don't like butter I would just put the pesto on by itself. Margarine will NOT taste the same.


Heat your oven to 375 degrees. Spread the pesto butter liberally on the salmon.


Put in the oven and bake until it flakes with a fork. Probably at least 30 minutes, depending on how thick the salmon is.Just keep checking it.


I used romaine and spinach as my greens, but any lettuce blend would probably taste great. I throw on blueberries, chop up some Sahale Glazed Almonds and I use this LITEHOUSE Toasted Sesame Ginger Dressing/Marinade. It is in the refrigerated area of your produce section. It tastes SO good.
