Champagne Punch

Delicious Champagne Punch! Perfect for a hot summer morning, day or night!

Serves 6


1 thinly sliced peach ( I use REALLY ripe ones and actually I used nectarines this time)
1 cup raspberries (I used strawberries:)
1 cup blueberries
1/4 cup fresh lemon juice
1/3 cup Simple Syrup*
1 bottle champagne or other sparkling white wine (I used Segura Viudas Brut Cava)
 
 Directions:

In a pitcher, combine ice, peach, raspberries, blueberries, lemon juice, and simple syrup. Slowly pour in champagne or other sparkling white wine.

*To make simple syrup for beverages:

Bring 2 cups of plain cold tap water to a boil. Stir in 2 cups of plain granulated sugar. Turn the heat to low and stir constantly until the sugar dissolves completely.

Let the syrup cool to room temperature, then pour into a clean glass jar and store in the refrigerator.

 I keep my Simple syrup in the fridge in a mason jar. You can use simple syrup for many different things. It never hurts just to have on hand.
 Martha's original recipe from Everyday Food, called for raspberries, but as in everything I do. I didn't have them on hand and so I used strawberries. They tasted equally as yummy.


 I had 1 and a 1/4 lemons, and it made exactly 1/4 cup of juice. My whole lemon didn't seem like it was going to give me a good amount of juice, so I microwaved it for 20 seconds and it helped.


 I had overly ripe nectarines in the fridge which is what actually inspired me to make this to bring to my parents for an impromptu dinner. I peeled the skin off and the too ripe of spots. I went through 3 to get this amount.
 I was taking this to go so instead of putting it into a pitcher I put it in a saved lemonade bottle I had. I put the simple syrup, lemon juice and the fruit into the bottle Put the lid on, grabbed my bottle of Segura, and was on my way. 


 When I got there I filled a pitcher with ice.
Dumped the contents of my bottle of fruit.
 Slowly poured in the Cava (sparkling wine)
