Mossage Scottsarella-From YUM! Food & Fun FOR KIDS


 Making Dinner!


Step One: Pour a drink. It's Friday Night!



I found this recipe last summer in Yum! Food & Fun FOR KIDS
 It is soooo YUM! And really not that hard a recipe, for being pretty much from scratch.

Ingredients:
1 pound spaghetti 
2 Tablespoons olive oil
3/4 - 1 pound Italian sausage (the original recipe calls for spicy which would be delicious to me, but not my kids:)

2 medium onions, coarsely chopped. I chopped mine finer for the kids, Oh! and Joe.

4 cloves of garlic - If you haven't gotten the crushed garlic from Trader Joes (in the freezer section) You are in for a revelation. Each frozen cube equals one clove of garlic. No peeling, no chopping, just pop it out and your in business.


 2 (14-ounce) cans petite diced tomatoes. I used Italian style. You could also use tomato sauce if your family doesn't like chunks. 

I cup Heavy Cream. 
3 Tablespoons tomato paste. I didn't have any I just added some plain tomato sauce. 
2 Tablespoons dried oregano
1/2 tsp. salt
2 bay leaves
3/4 pounds mozzarella, cut into 1/2 inch cubes
Crushed red pepper flakes (optional)

Cook spaghetti according to package directions in salted water.


 Meanwhile, in a large skillet, heat oil over medium heat. Add onion, garlic.


Crumble sausage into the pan. Brown the sausage and strain off fat.
 

Add tomatoes with juice, heavy cream, tomato paste, oregano, salt and bay leaves. Simmer until thickened.  





I always toss my noodles in olive oil. So they don't stick when I drain them.

 Remove bay leaves and stir in cheese. Cook for a couple more minutes until the cheese just begins to melt.



 Serve either mixed in with your spaghetti or on top of it.



We served ours with Caesar salad and bread! This re-heats really nice. 


 I hope you try this recipe it really is so good. And a welcome change from the same old spaghetti!

Yum Ashley this looks so good! I have a bunch of penne I will be getting rid of using this recipe :)
