Smores Parfaits

I came up with this dessert last summer because
A: I LOVE SMORES!
B: I love thinking of any way to reinvent the smore.
C: DID I MENTION I LOVE SMORES!
D: Any excuse to use a kitchen torch is good for me
So start by making your instant chocolate pudding per the directions on the package. Keep in fridge until you are ready to assemble the parfaits.

I use cool whip because it is delicious and the right consistency. I also use the Jet-Puffed Marshmallow Creme because I have it on hand for Smores emergencies :) You can't use frozen Cool Whip so when you buy it, put it in your fridge not your freezer until you are ready to make this.

Use a mixer or you could probably whisk it, until it is combined. It may be a little lumpy depending on how thawed your Cool Whip is.
Take your graham crackers and crush them up to your desired consistency. I like mine with some bigger pieces, not dust :)

I made this with my 4 kids and our 4 cousins today. Usually I would let them help me make the pudding and mix the marshmallow/Cool Whip and if I'm really nice I will give them each a ziploc bag and let them mash their own graham crackers. BUT today they came in and were on a schedule and it was kind of a last minute idea, so we went for the abbreviated version. :) It happens.
I bought the parfait cups for a buck at the dollar store!
Here are our ingredients I put them in a row and let the kids make their own. If you are doing this ahead or for a party though, you could buy those short plastic cups and use those. Just make sure you keep them refrigerated. I think they would even be cute in the bigger shot glasses. You could fill them with the Mallow and Pudding from pastry bags. It would be SO cute!
They all like to argue about which layer goes where and which tastes best.
The mini marshmallows are for the top layer.
KITCHEN TORCH- HOW I LOVE THEE! Toast your mallows to your desired doneness:)

Flaming!!!! The kids ooh and ahh until they blow it out. I am obviously standing right there.

p.s. I am sorry the quality of these pics sucks. Joe stole "OUR" camera. OK actually it's his, but I have adopted it :) Darn him!
