Mexican Chicken from the Pappas Family!

This is from my friend Sarah's family. It was REALLY yummy and easy!

Here's what you need:
Chicken breasts
Taco Seasoning (maybe 1/2 cup - John says, "till it tastes like tacos") I used a whole taco seasoning packet
Garlic (2 T or so, depending on how much you like it) I used 2 cloves (pressed)
Peppers (bell, anaheim, whatever kind you like) I used red and green bell
Cream of Corn (1-3 cans) I used 2
Tomato Sauce (about 2 cans) I used 1
CHEESE I used the fancy shredded Mexican Cheese
Rice I just made white rice
 
 
I think they just do the chicken breasts whole but I was in a hurry so I just sliced them.  My other friend had a great idea the next day. The chicken tender pieces. Those would cook even faster and be really moist and duh tender :) Put the chicken pieces into a shallow pan with a lid, add some water to steam it.
 
Add the water and garlic and put the lid on the chicken to steam. It won't take very long


I used the three cans on the right. I didn't end up using the little can of tomato sauce.
In a casserole dish, mix tomato sauce, taco seasoning, cream of corn and peppers


Mix it up

Add in some cheese. Mix it in.
 
Submerge the chicken in the mixture
Put some cheese on top
I cooked at 400 degrees for about 30 minutes (whenever it starts bubbling)
Spoon mixture over the rice! Enjoy with sour cream and/or avocado.
