When at first you don't succeed...

You may recall a while back I had a mini breakdown over my version of a Rachael Ray Philly Cheese Steak Skewer dinner. I had been super excited and craving it and then it ended up being super gross and disappointing. The steak was an awful cut and I burned the bread it just all fell apart into a disaster. I started craving it again last week and it took my little epiphany on finding the happy to give me the strength to try it again. Thankfully I did! YUM YUM YUM!

We had flank steak the other night and I had purposely bought 2  larger ones and we grilled both Friday night. We had enough left over to have last night as well. So I just grabbed the following to complete the meal. Here is what you need:

Obviously the steak :)
I used flank steak that was already grilled but you could grill it fresh as well. 
I like to cut it into bite sized pieces and skewer it. We reheated our steak on the grill last night

Cheese Sauce:
1 cube of butter
4 tablespoons of flour
2 cups of milk
Sharp Cheddar 2 cups shredded

salt and pepper


1 baguette cubed
olive oil spray
 salt & pepper
2 green bell peppers sliced into bite sized pieces
1/2 an onion cut into bite size pieces

I also made shell noodles and steamed broccoli to dip in the cheese sauce.

 I used my cookie sheet with the holes in the bottom and put my bread cubes on it. I set it into the sink to spray it (very generously) with the olive oil cooking spray. And then sprinkled it with salt & pepper. Make sure you shake the pan and make sure that all the pieces are sprayed.
 I also sprayed the peppers and onions and grilled the pieces on my broiler pan.
 Here are the steak skewers already cut into bite sized pieces. Joe just grilled them until they were warm. I steamed the broccoli and boiled the noodles while Joe did the grilling. We are a great team that way.
 Right before you are all ready to eat. Make your cheese sauce. If you are doing this for a group it may be a good idea to put it into a small Crockpot to keep it warm.

Start by melting your butter
 Add your flour and whisk it in

 It will begin to get frothy and thicken. Then add your milk slowly stirring it in
 Stir it slowly until it starts to thicken.
 When it comes to a boil add in your Sharp Cheddar. This bag was 2 cups.
 Stir it until smooth and combined.
 
Add salt and pepper
 
 We like to each have our own cheese sauce and then a plate to put our dipper on. We put it in the middle family style and then take what we want. I like to combine the steak, pepper, onion, and bread cube. It is FANTASTIC!!! This cheese sauce is SO easy and yummy. Really fun for a party!
 Keegan said it was the BEST dinner!
 You can also use this sauce to make home made mac and cheese! It is very versatile.
