Bruschetta for dinner







It is November 6th. It is Election Night. It is Harley's 1st Birthday. It's been a long ass week. What it's only Tuesday??!!?? Oh well :) I won't go on about political divisions or ideals. All I will say is this. What's done is done and its time to move towards a future we ALL can live with. Time to pull together people!

With that said. It HAS been a long ass week already and after a hard day for Cam yesterday, 4 kids home sick today, and my trying to hit my 30 day-100 mile run challenge by next Monday, I was looking for an "easy squeezy" dinner as my mom would say.

What's easier then pouring tomato soup in a pot and heating it up? Cutting up a baguette and slicing some cheese to make grilled cheese bruschetta? Not much!

I bought Creamy Organic Tomato Soup. It comes in a box. The best priced version of this I've found is at Trader Joes. But that's not to say you can't get good deals on it elsewhere.

I had already a package of sliced cheddar cheese, you can use whichever type of cheese you like

I also bought a French Baguette, ok 2 for my family :)

Step 1) I used olive oil and a good silicone brush. I brushed my pan which I had on the stovetop on medium heat.



Step 2)Then brushed one side of my bread slices LIGHTLY with olive oil.


Step 3)Placed them in the pan oil side down


Step 4)Placed my cheese slices on the bread and then watched and checked as the cheese melted.


Oh Harley Boy! Happy Birthday!


Done!





I serve my kids tomato soup in coffee cups. They dip they're grilled cheese in it! Yum!


So now for my dinner. The REAL bruschetta. Repeat Steps 1-4 but instead of cheddar place mozzarella slices on the bread. Then while the cheese melts...

Chop your tomatoes. I used mini heirlooms


I then tore up basil leaves and put a couple Tablespoons of balsamic vinegar, kosher salt (a pinch) and fresh ground pepper (a couple turns for taste!) then just let it sit and marinate until the cheese melted.


I spooned the tomato mixture onto the bread slices and drizzled the remainder of the balsamic for good measure :)


Um yum!!!!!


I'll be honest, I ate so many tomatoes I can feel the canker sores starting, but it is worth it!
Harley was patiently awaiting any dropped remnants. Poor buddy didn't get any.

He did get a few birthday treats though!


This was a great, EASY, delicious dinner! I HIGHLY recommend!
