Bacon Wrapped Beef Medallions, Grilled Asparagus and Smashed Red Potatoes

These are the steaks I got at Target. They were pretty good. Joe grilled them while I made the asparagus and potatoes, but actually he grilled the asparagus as well :)

 If you haven't done asparagus before. Hold it in your hand and near the bottom of the stalk just bend until it breaks. By doing this you break it, leaving only what is most tender.

 The potatoes like all my baked potatoes I started in the microwave. If you aren't sure search your microwave for a sensor cook or sometimes on the inside of the door there are guidelines for how long to cook potatoes and other things for. I have a sensor cook so it's super easy. This gets them most of the way done.You may want to poke them with a fork so they don't explode :)

 When they are done in the microwave I toss them with olive oil, kosher salt and fresh ground pepper.


 Put them in a single layer onto a cookie sheet and stick in the oven at 350 degrees. I did mine for at least 25-30 minutes. But you can tell when they are done.
 Then I used the same bowl to toss my asparagus in olive oil, kosher salt and pepper

Then I layer it onto a pan with holes on the bottom. This way it can go on the grill. It's obviously a well loved pan :)






 Joe put salt and pepper and some Worcestershire Sauce on them.

 When the steaks were almost done I took out the potatoes.
I smashed them with the heel of my hand

 Here is where I got smarter and used a paper towel to smash the potatoes with the heel of my hand :)

 The asparagus got a little more cooked then I like but it still tasted pretty darn good.The kids had 2 and three helpings of it. Joe had none :)




It was a simple summer supper!

Love the kitchen window that opens to the bbq:) and what a great idea to use that type of pan for asparagus! I love reading your blogs and learning new recipes. Thanks for sharing

The window makes our cooking/grilling team effort way more efficient. My aunt and uncle have a similar sliding window and we always thought it was a great idea. We had a sliding kitchen window we took the screen off of at our old house and when we built it was a must have again! Thanks for reading!
